Is there a particular method to inserting email and website links? For example in Dreamwever, you would click the button to insert those links and type your text in the appropriate boxes and it places them on the page for you.
Once I finished designing the text, I'm going to export in Dreamweaver.
Any assistance in this matter woud be greatly appreciated.

It depends on what type of document you are trying to create. I don't know if there is a way for you to add email or hyper-links to an illustrator .AI file or an EPS file. (Or for that matter, a reason you would want to since both formats are for print purposes mostly.)
If you are tryng to add hyper-links to a PDF document you created in illustrator. You may have to bring it into Adobe Acrobat Pro to do that. I don't believe you can add hyper links directly in Illustrator. That requires the program to be able to write it's own HTML code. Something I don't think the writer's of illustrator would have reason to add. -
